      Date: 1940 -

Description: Red plastic bucket, minus the handles, filled with brine. A wooden stirring stick sits in the bucket. A potato is floating in the brine. This is the test for the correct concentration of brine. The brine was used to top up the casks of salted mutton birds before sealing the cask. A plastic bin is a postwar brine bucket. Around the 1920's a half wooden cask would have held the brine.
